"The time you enjoy wasting is not wasted time." - Bertrand Russell
I hope this is true because instead of doing laundry, cleaning the house, and packing for the beach I have been puttering around. I made peanut butter cookie ice cream sandwhiches dipped in ganache (with a pinch of sprinkles for my girl).
1/2 cup butter
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1 pint vanilla ice cream, slightly softened
Mix first nine ingredients in a bowl. Roll into balls and dip into 1 cup of sugar. Place on ungreased cookie sheets.
Bake at 350 degrees for 9 to 11 minutes. Remove to wire racks to cool. For each sandwich, press 1 slightly rounded tablespoon of ice cream between two cookies.

1/4 c cream
6 oz chopped semi sweet chocolate
1 tbsp butter
steam cream, remove from heat and add chocolate. Let sit for 5 minutes and add butter; stir. Dip cookies halfway into ganache, add sprinkles, and freeze. After about an hour, wrap in wax paper and toss into a ziploc. YUMMO!
I also got the ladder out and peeked in the robin's nest while Matthew mowed the lawn (she was out of the nest because of the noise from the mower). The contents of the nest couldn't have been more beautiful (can you tell that little things make me pretty happy?)...there were three (!) eggs that were a bright teal...just gorgeous. after nap:
Mommy: do you want a peanut butter cookie, Caroline?
Caroline: yes, the biggest one in the sky.
